Baked Gruyere In Puff Pastry With Walnuts, California Raisins and Apple

Ingredients
Apple Raisin Mixture
- 1 cup walnuts, toasted and chopped
- 1 green apple, diced
- 1/3 cup California Raisins
- 1 tsp thyme, chopped
- 1 tsp flaky salt
- 2 tbsp honey
Assembly
- 200 grams Gruyere cheese, cut in cubes
- 1 sheet puff pastry
- 1 egg yolk
- .5 tsp flaky salt
Procedure

- Preheat the oven to 400F degrees, and line a cast iron skillet with parchment paper.
- Mix all the ingredients together in a bowl for the apple and raisin mixture.
- Place the square of puff pastry in the centre of the lined skillet.
- Add gruyere cheese right in the centre and top with half the apple and raisin mixture.
- Fold the corners of the puff pastry into the centre, making sure to not overlap or touch each other.
- Using the egg yolk, brush the puff pastry with egg wash and place in the oven for about 15 minutes until golden brown and the cheese is melted.
- Serve with crackers, some honey and more of the fresh apple raisin mixture on the side.
