Baked Gruyere In Puff Pastry With Walnuts, California Raisins and Apple

    Ingredients

    Apple Raisin Mixture

    • 1 cup walnuts, toasted and chopped
    • 1 green apple, diced
    • 1/3 cup California Raisins
    • 1 tsp thyme, chopped
    • 1 tsp flaky salt
    • 2 tbsp honey

    Assembly

    • 200 grams Gruyere cheese, cut in cubes
    • 1 sheet puff pastry
    • 1 egg yolk
    • .5 tsp flaky salt

    Procedure

    1. Preheat the oven to 400F degrees, and line a cast iron skillet with parchment paper.
    2. Mix all the ingredients together in a bowl for the apple and raisin mixture.
    3. Place the square of puff pastry in the centre of the lined skillet.
    4. Add gruyere cheese right in the centre and top with half the apple and raisin mixture.
    5. Fold the corners of the puff pastry into the centre, making sure to not overlap or touch each other.
    6. Using the egg yolk, brush the puff pastry with egg wash and place in the oven for about 15 minutes until golden brown and the cheese is melted.
    7. Serve with crackers, some honey and more of the fresh apple raisin mixture on the side.
