Chocolate Pudding “Tiramisu” with Coffee and Bourbon-Soaked Raisins

Ingredients
Chocolate Pudding Tiramisu
- 1 cup brown sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 2/3 cup cocoa powder
- 4 cups whole milk
Coffee and Bourbon-Soaked Raisins
- 1 cup California Raisins
- ¼ cup sugar
- 2 cups freshly brewed coffee
- 1 oz bourbon
Garnish
- 1 tablespoon whipped cream
- cocoa powder, to sprinkle
Procedure

- In a saucepan, add all the ingredients for the pudding on medium heat and cook while whisking until the mixture has thickened and can coat the back of a spoon.
- Place the mixture into a serving dish, and cover with plastic wrap to prevent a film. Place into the fridge for a minimum of 2 hours.
- While the pudding is cooling, place the California Raisins in a bowl and cover with freshly brewed hot coffee, sugar and bourbon. Let sit while pudding is setting.
- Once pudding has set, top off with a sprinkle of cocoa powder, a dollop of whipped cream and a teaspoon of the bourbon and coffee-soaked raisins.
