Rum and California Raisin Chocolate Truffles

Ingredients
- 1/3 cup California Raisins, chopped
- 2 tbsp dark rum
- 300 grams dark chocolate
- 1/2 cup heavy cream
- 1/2 cup cocoa powder, for rolling

- Place the chopped raisins in a bowl with rum and mix. Allow this to soak for a minimum of 1 hour, or overnight if you have time.
- Break the chocolate into pieces and place in a bowl.
- Heat the cream until simmering and pour over the chocolate. Allow to sit for about 1 minute and then mix until smooth.
- Fold in the soaked raisins.
- Allow the mixture to cool at room temperature and then place in the fridge to firm up.
- Scoop out teaspoons of the chocolate ganache and roll in your hand and then roll into cocoa powder. If the mixture is too firm, allow to stand at room temperature until it softens slightly.
