Tuscan Chicken Sandwich with Orange Aioli and California Raisins

Ingredients
Chicken Salad
- 2 cups rotisserie chicken, shredded
- 1/4 cups red grapes, sliced in half
- 3 tbsp California Raisins
- 1/2 cup fennel, thinly shaved
- 1 tsp salt
- 1/2 tsp Freshly Cracked Black Pepper
Orange Aioli
- 1/3 cup mayonnaise
- 1 large naval orange, zested and juiced
Sandwich
- 4 focaccia bread, sliced
- 1/2 cup fresh arugula, per sandwich
- 3 slices provolone cheese
- chicken salad, divided evenly
Procedure

For the Tuscan Chicken Salad:
- In a bowl, add the rotisserie chicken and shred with a fork.
- Mix the remaining ingredients into the shredded chicken.
For the Orange Aioli:
- Make the aioli and pour into the chicken salad, mix and taste for seasoning.
For Assembly:
- On the bottom half, lay down arugula, provolone cheese and then top with chicken salad.
- Place top focaccia on and enjoy!
