Broccoli Raisin Salad Rice Paper Rolls

Fantastically fresh tasting, these satisfying rice paper rolls include the unexpected, California Raisins. But after eating these, you might wonder why you didn’t try experimenting with them sooner.

    Ingredients

    • ¼ cup mayonnaise
    • 1 tablespoon grainy mustard
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon brown sugar
    • 1 clove garlic, minced
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 6 slices bacon, crispy cooked and crumbled
    • 1 head broccoli, cut into small florets
    • ½ small red onion, thinly sliced
    • ½ cup California raisins
    • 1/3 cup sunflower seeds
    • 2 tablespoons finely chopped fresh parsley
    • 8 rice paper wraps
    • 8 large leaves lettuce

    Procedure

    In large bowl, whisk together mayonnaise, mustard, vinegar, brown sugar, garlic, salt and pepper until blended. Add bacon, broccoli, onion, raisins, sunflower seeds and parsley; stir until well combined. 

    Soak a rice paper wrap in hot tap water for 10 seconds or until pliable; carefully transfer to slightly damp kitchen towel. Arrange lettuce leaf in center of wrap, leaving a border around sides. Spoon one-eighth of broccoli mixture down center of lettuce leaf.  

    Firmly fold the bottom of the wrap over the filling, fold in the sides and roll up to completely to enclose filling. Repeat with remaining rice paper wraps, lettuce leaves and broccoli mixture. Store for up to 1 hour, tightly covered with plastic wrap, until ready to serve. Slice in half on an angle to serve. 

    Notes: 
    Spice up broccoli mixture with 1 tablespoon sriracha hot sauce or sambal oelek.  

    Alternatively, roll salad in whole wheat tortilla wraps.
